Spinach, Catalan-style March 5, 2010

Yield: 4 servings

Apples, raisins and pine nuts make this spinach dish anything but typical. This dish goes quickly, so have all your ingredients ready to go!

Ingredients:

  • 2 tablespoons olive oil
  • 1 golden delicious apple, peeled, cored, and cut into 1/4-inch dice
  • 1/4 cup pine nuts
  • 1/4 cup raisins
  • 1/2 teaspoons salt
  • 10 ounces baby spinach

Procedure:

  1. Heat the olive oil in a large skillet over medium heat. Add the apples and saute for about 1 minute, until lightly browned.
  2. Add the pine nuts and sautee for 20 seconds. They cook quickly, so be careful not to burn them. Add the raisins and the salt – keep stirring.
  3. Add the spinach and sautee it quickly until it starts to wilt. Remove the pan from the heat; the spinach will continue to wilt. Season with additional salt to taste. Serve immediately.
