Yield: 2 servings

This tasty breakfast comes together quickly when the farro is already cooked and cold. Prepare farro just like you would pasta. Bring water to a rapid boil in a saucepan. Add farro and some salt. Farro takes about 35-40 minutes to cook. The finished product will be chewy but not hard. Drain, cool, and then store cooked farro in the refrigerator. Use it also to make Farro with White Beans and Chard or Farro with Black Beans and Chipotle Lime Vinaigrette.

Ingredients:

  • 2 cups plain yogurt
  • 1/3 cup pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/2 cup cooked farro
  • 1/2 cup raisins or fresh sliced banana

Procedure:

  1. In a small mixing bowl, combine the yogurt, pumpkin puree, and cinnamon.
  2. Assemble each parfait in a tall glass by layering the yogurt, cooked farro, and then raisins. Repeat layers. Serve cold.
